Chicken in Crock Pot

It seems like we have been doing a lot of mac n’ cheese (Back to Nature), baked chicken nuggets (Bell & Evans Gluten Free) and frozen pizza (Annie’s Frozen Pizza – recently recalled). We try to pair the food with broccoli, peas, or spinach but we are in need of some homecooked food. Today, I decided to make something super easy – chicken in the crock pot. I bought a whole organic chicken from Costco (love the fact they are offerring more organic products) I put the chicken in the crock pot, poured some olive oil on top, a little black pepper and a generous amount of tumeric. I love adding tumeric to meats it is a healthy addition that I do not think changes the flavor too much. It also works great to give the chicken a beautiful golden color. See below for super easy steps!

Super Easy Chicken in Crock Pot:

Step 1: Put Chicken in Crock Pot

Step 2: Sprinkle with olive oil, black pepper and a generous portion of tumeric (if you have it…if not I would recommend buying some).

Step 3: Cook all day on high.

Step 4: Pair with favorite vegetable. My 4 year old’s favorite – baked sweet potatoes/ yams.

We’ve actually done the above steps for a small turkey as well. It makes a super easy and juicy turkey.

Roasted Root Vegetables

Use any of the following: carrots, sweet potatoes, potatoes, mushrooms, onions, cauliflower, broccoli. But our favorite are sweet potatoes or yams.

Step 1: Drizzle olive oil on cookie sheet or baking pan.

Step 2: Spread all vegetables out in layer. (We usually slice the potatoes but you could cube.)

Step 3: Drizzle again with olive oil and springle with pepper and Kosher salt to your liking.

Step 4: Bake 30 minutes at 350 or until tender. The kids usually like them really tender so we tend to cook for 45 minutes. They heat up well the next day so you could always make the night before if you don’t have time in the evening.

For a healthier alternative, you can pass on the olive oil and instead layer onions on bottom of pan…they will help steam the vegetables and you will not need the olive oil. This was  a tip from Uncle J. :)
